During the 40+ years of being in the business, George 'Vivian' Tonkin along with his wife Margaret are the owner/creators of Vivian's Honey in Hatherleigh, Devon and who is one of only a handful of full time beekeepers in the UK and is a true professional.
George & Frame/Honey Frame with Bees
With 300 hives containing around 40,000 bees, he produces an average of 10 tons of honey every year. George keeps his bees in apiaries on 25 different sites in the area, with a limit of 16 beehives per site. The bees gather pollen from the rich clover pastures and wild hedgerows in and around the Ruby Country, to make his honey. Once the bees have made the honeycombs, George takes them back to the workshop/mini factory next to his house and it is here where the honey is then extracted by his two assistants, Ruth (pictured below) and Dot. The honey is too sticky to scrape out of the combs, so they use a vibrating machine instead. The only processing that they actually do to the honey is to extract the wax. The amber-coloured honey is then pumped into jars of different sizes and is then ready to be sold in and around the westcountry, but it's that good it can be seen at the prestigious Fortnum & Mason food hall, in London.
